Oatmeal breakfast with plum compote for a cold winter morning
Note: Make the plum compote at least the night before. Or just prepare a large amount of compote whenever you feel like it to get through the winter. This way you can spontaneously decide to make this breakfast any morning. Then it's done within 5 minutes and you'll be eager to start your day!
Recipe for: 2 large jars + 1 person oatmeal porridge

Ingredients for the plum compote
- 500 g fresh plums, pitted and cut into quarters
- 150 g dried plums, pitted and cut into quarters
- 3 pieces of star anise
- 200 gr jelly sugar
- cube of fresh ginger (cut into pieces 2 to 3 cm)
- 1 cinnamon stick (or 1 teaspoon cinnamon powder)
- 50 ml of water
- 2 large jam jars (boil the jars and lids for a few minutes to sterilise)

- 60 grams oat flakes
- 200 ml milk of your choice
Get started for the plum compote
- As mentioned above, first of all make sure that the jam jars are properly cleaned. Boil them for a few minutes in a pan of water. Then drain them upside down on a clean towel. -Homemade compote generally has a shorter shelf life than store-bought, but this way the jars (unopened) will last for about 3 months.-
- Put all (dried and fresh) plums in a large pan. Add 50 ml of water, all the spices and the sugar. Gradually bring to a boil.
- Let it simmer for about 15 minutes while stirring occasionally with a wooden spoon.
- Smooth out the largest plums with a spoon or fork.
- When the substance has the desired thickness, pour the warm compote into the jars.
- Tightly screw the lid onto the jar and turn it upside down to make it vacuum. Let stand for at least 10 minutes.

- Put the oatmeal in a pan, add your milk of choice and bring to the boil while stirring.
- Let it cook slowly until the porridge has thickened.
- Of course you can add things like seeds or nuts. But…. for the best taste sensation I recommend not adding too much but just enjoy the spoonful of plum compote on top!
